Olive oil ice cream

Ingredients
- 300 ml milk
- 150 ml fresh cream
- 100 ml sugar
- 3 egg yolks
- 3-4 tbsp. olive oil
Step-by-step instructions
Step 1
Bring the cream and milk to the boil in a saucepan.
Step 2
In a bowl, whisk the egg yolks with the sugar until the mixture whitens. While stirring, pour the hot milk mixture, a little at a time, over the egg yolks.
Step 3
Return everything to the pan and cook the cream over a low heat, stirring with a wooden spoon, until the temperature of the mixture reaches 85°C or the cream coats the back of the wooden spoon. Stop cooking immediately.
Step 4
Stir in the olive oil and leave the mixture to cool completely before using an ice-cream maker to whirl it.
